|Flax Veggie Burgers

My favorite veggie burgers...so far!
Isn’t it wonderful when you look in the fridge and you have all of the exact ingredients you need to make your favorite recipe? I know it doesn’t happen that often, especially without having planned it, and gone out specifically to get them. This happened to me last night. It just so happened that everything I needed to make my favorite veggie burgers was all in the kitchen without even knowing it! As tired as I was, I could not pass up the chance to make now!
As the cooking process went on I realized that I also had all of the ingredients to make my favorite sun dried tomato avocado spread which goes so well with the burgers. Once I was making all of that oven baked fries followed right along…and with a little salad, I had a beautiful dinner! It came together beautifully, and I hope that you enjoy these recipes sometime soon as well. Enjoy!

A bite of goodness
The other night we had a dinner party with some of our friends here in Boulder. It was great to see them again as time seems to get away from us when it comes to socializing. When it comes to having a dinner party, I am always happy to create something that I don’t usually make for myself. A new recipe, or an old favorite becomes an opportunity for a new twist. I have been playing with tart recipes for a little while now, and thought that would be perfect for this crowd. A mix of gluten-free gourmets I knew that it would be a great opportunity to try out a gluten-free tart crust. Thankfully, the reviews were quite supportive of the outcome!
I made two different crusts because one friend also avoids flax and almonds, but I still wanted to see how the tart would taste with those ingredients…personally I think both were really good. I will list the variations below in case you want to try both as well. I will not mislead you by saying that this recipe is easy. It was a lengthy process, but it was totally worth it! And we just made sure to make extra so we would have leftovers to savor for the next few days. (I suggest you do so as well!)

Falafel (2 ways)

Little chickpea patties, perfectly spiced and slightly crunchy on the outside. Falafel are something that I did not discover until my adult years, but since then, I have made up for the lack. I have yet to travel to a country where falafel is the specialty, but after trying around, my favorite falafel was at a Lebanese restaurant in Paris. I tried to search for the restaurant online so that I could give you a link or an address, but I haven’t been able to find it so far. Their falafel was so good though! It was always on my list of places to go when I visit Paris.

While I have great affection for falafel, I prefer my falafel to be very lightly fried, or not fried at all, which is why C. and I prefer to have homemade falafel when possible. Personally, one of the most important ingredients is fresh chickpeas… I know that soaking and cooking chickpeas seems like so much more work, but it is totally worth it! And personally I don’t think it is more work, it just takes some planning ahead. Try comparing them sometime and I think you will taste the difference! If you are overwhelmed by the idea of making falafel and cooking your own chickpeas, take it easy and just start with making the falafel, but once you get more confident…definitely try it!
The recipe below is the same for both ways of cooking, but I will give you 2 options to cook them.
